Noma has not only set the scene for New Nordic cuisine, it has also created a brilliant movement focusing on local & fresh produce.
Many of Noma alumni’s have opened their own restaurants around the world including here in Australia. In Copenhagen you will find Relae, Bror, Geranium, Amass, Fiskebaren among many others.

Fredericia: Ti Trin Ned (“Ten Steps Down” as it is located in a basement, and there is actually 12 steps down) – an experience appealing to all our senses in a small intimate setting. Fredericia is 2 hours from Copenhagen, centrally located, on the way out to Århus.

Århus: Villa Dining (Malling & Schmidt together with Kähler design) – Focus on Nordic traditions and spoiling of the tastebuds with the best of Danish gastronomy. Housed in a lovely Danish Villa. Frederikshøj – the cuisine is classic, but modern and unpredictable. Frederikshøj is truly capturing the essence of fine dining with its sophisticated new Nordic approach.
